Amaranth leaves in general are recommended as a good food with medicinal properties for young children, lactating mothers and for patients with fever, haemorrhage, anaemia, constipation or kidney complaints. The whole plant is used as a medicine against stomachache.

A group of compounds known as flavonoids are present in red sorrel, which are known to be anti-oxidants. The flavonoids are also what makes is a good deterrent against specific types of cancer. The immune system is also enhanced due to the flavonoids. Sorrel contains high amounts of vitamin c, vitamin a, magnesium, calcium, and potassium.
The leaves are emollient and have traditionally been used to treat scorpion sting and snake bite, tumours, and to help rid the body of intestinal worms. The leaves can be used as a poultice to treat bruises, boils, and wounds.
